Heungbuga is a yukhoe (Korean beef tartare) bibimbap restaurant on Daehak-ro in Yeongju, Gyeongsangbuk-do, established in November 2007 and now regarded as the city's flagship dining destination. The restaurant traces its origins to the founder, a grandmother descended from a yangban (noble) family, who began preparing yukhoe according to a recipe passed down through generations. The kitchen is now managed by her son, who maintains the same standards. What sets Heungbuga apart from other raw beef specialists is the use of hanwoo udun-sal, the rump cut, which yields a noticeably softer texture than the more commonly used cuts, the beef practically dissolves on the palate. The vivid red color and freshness of the meat make the quality of the ingredients immediately apparent. The menu is deliberately simple: yukhoe bibimbap, bulgogi bibimbap, and yukhoe served on its own. The yukhoe bibimbap is available in a regular size at 13,000 won and a special size at 20,000 won. Mixing in the chojang sauce brings out a clean, nutty sweetness that complements the raw beef without masking it. Equally impressive is the banchan spread, which rivals a full hanjeongsik course. The lineup includes kimchi, kkakdugi, garlic jangajji, pepper jangajji, salad, fried fish, japchae, boiled eggs, and potato salad, among others, and critically, these are not pre-made and cooled but freshly cooked, arriving warm and crisp. The miyeok-guk served alongside is excellent and pairs naturally with the bibimbap. Mealtimes invariably produce a queue, though table turnover is relatively swift. Lunch reservations are recommended. Parking is available in front of the restaurant and along the riverside area nearby. The owner and his son provide attentive, warm service that consistently draws praise and contributes to the high rate of repeat visits.
