Kongaru buchu-jjim, garlic chives steamed until limp and coated in roasted soybean flour, is a Gyeongsang side dish that puts fragrant chives and powdery bean flour in the same bite. The galbisal arrives red and unseasoned and needs only a quick sear on the grill. Without a reservation it is hard to get a table. For rice, there is yukhoe bibimbap.
