In baekmisam, thick aged pork belly shares the grill with white aged kimchi and minari, Korean water dropwort. Swap the belly for hangjeongsal, fatty pork jowl, and the dish becomes baekmihang. The restaurant spans the first and second floors of the Mapo Masters Tower near Gongdeok Station, with enough room for family gatherings with small children. Staff grill each cut to temperature and slice it, and smoke extractors at every table keep the smell off clothing. Gwangyang-style aged neck brushed with soy sauce and beef sirloin are also on the menu.
