The sweet-and-spicy sauce is the restaurant's defining element, coating bean sprouts and octopus evenly and unifying every ingredient into a cohesive, deeply satisfying flavor. A precise balance of moderate heat, pleasant tang, and natural sweetness means that anything mixed with the sauce tastes exceptional. Despite the fiery appearance, the heat level is quite manageable, approachable for those with low spice tolerance, though potentially underwhelming for diners who seek intense spiciness. The nakji-gopchang version incorporates beef intestine and its rich inner fat, adding a savory, nutty layer that gives the dish noticeably more depth than the standard octopus stir-fry, and it comes highly recommended for gopchang enthusiasts.
