Dongseo's Nakji Bonjeom 동서네낙지 본점

Dongseo's Nakji Bonjeom is an octopus restaurant on Inbuk-ro 46-gil in Iksan, specializing in nakji bokkeum and a version that combines octopus with beef intestine. Octopus, bean sprouts, vegetables, and red seasoning cook together on a broad stone pan set over heat. The octopus is cut into pieces substantial enough to retain springiness, while the large volume of bean sprouts releases moisture that spreads the sweet, spicy sauce across the pan. Standard nakji bokkeum keeps seafood and crisp vegetable stems at the center of the dish. So-gopchang nakji bokkeum adds sections of beef intestine with their rich interior fat, giving the same red seasoning a heavier sheen and a more concentrated finish. Thick udon noodles can be added directly to the pan, where they absorb sauce between the octopus and sprouts. Cylindrical rice cakes contribute a separate chewy texture. Thin slices of pork belly spread across the hot stone as another add-on and cook in the sauce and moisture released by the sprouts. Cheese melts over the red seasoning and adheres to pieces of octopus and noodles. Gopchang and nakji come as separate additional portions, allowing the proportion of seafood and intestine to change without replacing the base dish. Yeonpo-tang treats octopus differently, cooking it in a clear broth instead of red sauce. The pale soup leaves the octopus color and curled shape visible. Tangtangi is another contrast, using finely chopped raw octopus and serving its elastic texture cold. After the stir-fry, rice and crushed seaweed are mixed into the seasoning left on the hot stone. The rice is spread thinly so that the bottom layer picks up browned, crisp patches while the upper grains remain softer. Roughly four small side dishes occupy the edges of the table and the large stone pan fills its center. The compact dining room has about twenty-two seats, mainly at four-seat tables facing shared stone pans. Udon, rice cake, octopus, and gopchang remain within reach of everyone around the pan.
