Thick, deliberately preserved pastry edges set the pies apart at this Sinchon shop, which has been baking near Yonsei University for over a decade. The earl grey ganache pie puts tea-infused cream on a very crisp crust, and the matcha pie has a concentrated tea flavor. Those two are the house best sellers, and the earl grey sometimes sells out first. Apple crumble leans on cinnamon and a generous amount of apple. Fruit pies rotate with the season, from peach and fig to apricot-plum whole wheat and pistachio cherry. In the apricot-plum pie, soft cream backs the tart plum, while cherry cuts the richness of the pistachio in the other. Marco Polo, with a light floral and fruity scent, and Thai lime, heavy on lime, sit alongside the coffee. Downstairs is busy with takeaway orders, while the country-style second floor has a long communal table that fills up on weekends.
