Daeheung Sikdang 대흥식당

Daeheung Sikdang is a pork-head gukbap restaurant with more than fifty years of history inside Osaek Market in Osan, Gyeonggi Province. It retains the direct structure of a market soup shop used by vendors and local regulars. The bowl is prepared with toryeom: hot broth is poured over rice and meat several times, drained, and returned until the contents reach an even serving temperature. Rice absorbs the soup before the bowl reaches the table, so its grains begin soft and seasoned rather than changing only after a separate portion is added. The broth remains clear and mild while carrying pork flavor. Pork-head meat and offal fill the bowl with several textures, including lean slices, fattier pieces, and more resilient parts. By custom, male diners receive a broader mixture of fat and offal while female diners receive a leaner selection. The requested cuts may be stated at the time of ordering regardless of that default, allowing the bowl to emphasize lean meat, fat, or a mixed arrangement. Boiled pork head and pressed pyeonyuk are separate plates for sharing or for tasting the meat outside the soup. Kkakdugi contributes fermented radish acidity and a crisp bite. Seasoned salted shrimp may be placed directly on a piece of meat or dissolved gradually into the broth to increase salinity without changing the entire bowl at once. Pork-head gukbap costs 10,000 won. Boiled-pork platters range from 12,000 won for a small order to 22,000 won for a large one. The restaurant closes every Monday and also on the 10th, 20th, and 30th of each month. Drivers use the Osaek Market public parking lot and walk into the market. Daeheung Sikdang is not organized around a decorative spread. Its core is the old market sequence of evenly warmed rice, clear pork broth, selected head-meat cuts, radish kimchi, and salted shrimp, with a separate meat plate added only when the party wants to compare the soup pieces with plain boiled pork.
