Bunko 분코

Thick slices of aged salmon, tuna, and flatfish share one board, each with its own balance of fat, grain, and bite. Saba bozushi is mackerel laid over vinegared rice, pressed, and cut. The futomaki, a fat roll of seafood and vegetables, is large enough that a half roll is also offered. Hot plates include crisp menchi katsu (a breaded minced-meat cutlet) and koji-marinated pork jowl grilled over charcoal. The second-floor room near Sadang Station is dimly lit, with tables and a bar facing the charcoal station. Drinks are expected with food, and the list leans toward sake.
