Before the main dish even arrives, a complimentary serving of minced seasoned beef tartare sets the tone, its spicy, savory seasoning without sweetness signals the restaurant's distinctive flavor profile. The yukhoe in the bibimbap is neither cold nor tough, delivering a rich, beefy depth with every bite, while the portion runs roughly double what comparable restaurants in Seoul would offer at a similar price point. Vegetables are piled generously alongside the beef. The galbitang features a deeply savory bone-broth base with a generous amount of short rib, served in a bowl large enough that many diners struggle to finish it.
