Pork is sliced slightly thicker than daepa-samgyeopsal, marinated in a proprietary soy-based sauce, and grilled over yeontan coal briquettes. The use of chilled rather than frozen meat preserves the natural juiciness, and the interplay of coal smoke with the sweet-savory marinade produces a flavor that draws people back repeatedly. After the meat is cooked, eating a whole uncut piece draped over rice is a local trick for maximizing the experience. Wrapping a slice in ssam greens with a dab of tohajeot, a fermented freshwater shrimp paste unique to the Jeolla region, is the definitive way to eat here. The salt of the paste cuts through any richness and adds a layer of depth. Banchan including lettuce, peppers, doenjang-guk, steamed egg, and tohajeot are available from a self-service bar, and the house-made Jeolla-style kimchi pairs exceptionally well with the pork. One serving of 250 grams is priced around 14,000 won, and bulk takeout at 25,000 won per kilogram offers even better value. Weekend lunch waits can exceed an hour, and while table turnover is fairly fast, the atmosphere inside tends to be hectic. Limited parking is available in front of the restaurant, with an overflow lot at the nearby Nonghyup building.
