Hanwoo bulgogi simmers in a pot crowded with mushrooms and vegetables. It doesn't lean on sugar, so it tastes plain at first and comes into balance as the broth reduces. A portion is 200g; once the beef is gone, rice is fried in the leftover broth, followed by nurungji and plum tea. Among the side dishes, pickled chamoe melon is very much a Seongju thing, crunchy, sweet and salty at once. The yukhoe wears a red gochujang dressing but has almost no heat.
