The owner makes onion oil in-house, pours it into a cast-iron cauldron and fries fish only as orders come in. There are two fish: dalgogi (John Dory), mild with fine flakes, and shark, moister and almost buttery. The batter fries into a thin, lacy, crisp shell, and forkfuls of the chicory salad on the side keep it from getting greasy. One person runs the shop, so you fetch your own drinks from the fridge, and with a fixed amount fried each day the doors close before dinner.
