Jeongok Chueotang 정옥추어탕

Chueotang comes with a pot of freshly cooked rice, and once the rice is scooped out, water poured into the pot turns the crust into a toasty nurungji by the end of the meal. The soup itself, finely ground loach simmered with dried radish greens, is mildly spicy, with almost no fishy note and no bones to catch. About eight side dishes arrive, squash pancakes and small meat patties among them. Crisp fried loach and tteokgalbi, grilled minced-beef patties, are separate dishes.
