The pyeonyuk is made from pork neck meat, simmered to a pillowy tenderness with a clean, satisfying meatiness. For two diners, the standard order is two bowls of makguksu and one plate of pyeonyuk, while solo visitors can order a half plate. Portions lean modest, so upgrading to a large bowl or ensuring pyeonyuk is on the table is advisable.
