Bao Seoul Seongsu 바오서울 성수

Slow-braised pork, pickled greens and crushed peanuts fill the classic bao, a white steamed bun folded like a half moon, at this Seongsu counter on Yeonmujang-gil. The small room, done in green with Taiwanese street-food touches, has bar seats and tables for 2 or 4, and even weekday evenings see a wait. The chicken bao packs a big, crunchy piece of fried chicken under a generous sweet-spicy sauce. Taiwan beef noodle soup comes with large, tender chunks of beef in a broth sharpened by black vinegar, and the peanut noodles leave a slight numbing tingle. A set for two combines the classic bao, Dongpo pork rice bowl and beef noodle soup.
