Seoul Brewery Seongsu occupies an entire brewing and pub building at 310-53 Seongsu 2-ga 1-dong in Seongdong-gu, Seoul, about 300 meters from Seongsu Station. High ceilings and an open multi-level volume give the room the scale of an active brewery rather than a compact taproom. The beer list extends beyond one flagship lager, covering styles with different color, aroma, bitterness, malt weight, and finish. A sampler places smaller pours side by side, allowing the diner to compare foam, first aroma, body, bitterness, and aftertaste before selecting a full glass. Moving from a lighter pour toward a more aromatic or heavier one prevents the earlier beer from being immediately overwhelmed. In a group, each person can begin with another sample and exchange small comparisons, turning differences in perceived aroma and bitterness into part of the conversation. The signature fried chicken uses pilsner in the batter. Its coating breaks into thin crisp pieces around meat that retains juice. Salt and fat from the chicken alternate naturally with carbonation, bitterness, and grain character in the beer. Lighter chicken meat can accompany the first, cleaner pour, while the more seasoned skin can remain for a stronger glass later in the tasting order. Additional food and side dishes expand the pairings beyond one fried plate, distributing salty, crisp, and softer textures among the beers. NFC tags at the tables open the menu and handle ordering, reducing movement to a counter within the large building. Coffee is handled on the first floor, giving a non-beer drinker another beverage route within the same space. The room is lively, but its high ceiling and broad volume leave enough openness for conversation across a longer tasting session. Seoul Brewery Seongsu is most useful when treated as a sequence rather than a single pint stop: inspect several small pours, identify the preferred balance of aroma and bitterness, move to a full glass, and change bites of chicken as the beer grows heavier. The fact that brewing, drinking, food, and comparison happen within one dedicated building gives that sequence more context than a bar simply carrying many outside labels.
