The beef is Hongseong 1+9 grade Hanwoo, and the anchang-sal (outside skirt) and salchi-sal (chuck flap) are densely marbled and melt quickly. Raw liver, tripe, yukhoe and beef jeon arrive before the grilling starts, and a platter called 'What Should I Eat Today' gathers small portions of special cuts.
