Wonjo Paldang Kaljebi 원조팔당칼제비집

Kaljebi puts knife-cut noodles and sujebi in the same bowl. Long, chewy strands mix with hand-torn flakes of dough in every thickness, and each spoonful bites a little differently. The broth comes mild, clear and light, or spicy and red with chili flakes, which gives a friend who can't handle heat something to order too.
