Useong Samgyetang 우성삼계탕

Samgyetang has been the only dish for some forty years, so ordering is just a matter of saying how many people are at the table. A young chicken stuffed with glutinous rice, ginseng and jujube simmers until the meat slips off the bone, and garlic comes through clearly in the broth. Fried chicken gizzards arrive with every table, firm outside and chewy within, and some people admit they come mostly for those.
