Black pepper goes into the ongsimi broth generously enough to be clear from the first spoonful. In the ongsimi kalguksu, wheat noodles soak up the soup until it thickens, while the ongsimi-only bowl is chewy potato dough from start to finish. A little barley rice arrives before the main bowl, to mix with young-radish kimchi, seasoned radish and gochujang. The bibim makguksu has a strong sauce.
