Aged hanwoo beef from Yeongju is grilled by staff, much of it in front of diners at the bar counter. Kkotdeungsim (ribeye) brings marbled richness, ansim (tenderloin) is leaner with a softer grain, and the premium special cuts put striploin, upjinsal (a fatty belly cut) and rib meat on one plate. Salt, fresh wasabi and a garlic soy sauce each change how a slice tastes, while water kimchi, pickles and myeongi leaves cut through the fat. Doenjang jjigae loaded with beef, eaten with rice, or a beef ramyeon closes the meal.
