Fresh makgeolli, unfiltered rice wine, has been brewed and bottled at this family operation below Duryunsan in Haenam since 1950, now in its third generation. Samsan fresh makgeolli at 6% drinks light and crisp, with an angelica-like herbal note over the grain. The 9% Haenam glutinous-rice version uses domestic sticky and regular rice, no preservatives or sweeteners, and gets its flavor from grain sweetness and fermentation tang; a thick layer of sediment settles at the bottom. At 12%, the same line turns denser and the alcohol lingers. Roll bottles slowly rather than shaking them to mix the sediment, and keep them cold.
