Samsan Brewery 삼산주조장

Samsan Brewery is a family makgeolli producer and bottle shop near Duryunsan in Samsan-myeon, Haenam. Operating across three generations since 1950, it functions as a production-site shop rather than a restaurant or drinking hall. Samsan fresh makgeolli at 6 percent has the lightest alcohol presence of the main range and a refreshing direction, with an aroma associated with angelica above the grain. Served cold, it shows light carbonation and a thinner body first. As the temperature rises, rice and herbal aromas become clearer. Haenam glutinous-rice fresh makgeolli at 9 percent blends domestic glutinous and non-glutinous rice without preservatives or sweeteners, centering natural grain sweetness and fermentation acidity. A thick layer of sediment can occupy much of the lower bottle. Pouring only the clear upper portion produces a lighter drink, while slowly mixing the bottle disperses rice particles and creates a thicker, nuttier texture. The 12 percent glutinous-rice version increases viscosity, concentration, and the warmth of alcohol. Comparing the 9 and 12 percent bottles shows how mixed rice, fermentation, and maturation change weight without relying on added sweetness. A three-bottle progression can begin with the lighter 6 percent drink, move to the grain-rich 9 percent bottle with sediment mixed in, and finish with the denser 12 percent version. Because live makgeolli retains yeast and rice sediment, the bottle is rolled gently rather than shaken aggressively and kept cold to control pressure and overflow. The site is oriented toward selecting bottles to carry away, with vehicle access in the Duryunsan area. Alcohol level is only one dividing line. Temperature and the amount of sediment mixed into each pour also change aroma, carbonation, grain texture, and perceived sweetness.
