The brewery behind the former Seochon Jumak pub now works from a basement unit on Tongil-ro in Eunpyeong-gu, and the space is given over to brewing and tasting rather than meals. Seochon Makgeolli 15 uses only Korean glutinous rice, traditional nuruk starter and water, brewed in a single stage and fermented slowly at low temperature, with no added flavoring, sweetener or coloring. Tasting it beside a 12 percent bottle from the same line shows how strength changes body and pace. Wolgan Onji, a periodic release, follows a different experimental direction each time. Saturday open-house sessions pour these alongside small test batches with explanations, but there is no food menu to make a dinner of.
