One Wando abalone, chicken and glutinous rice share the earthenware pot in the basic abalone samgyetang, a chicken soup where the meat slips off the bone and the abalone gives the broth savoriness without weight. Other versions change the broth: mung beans dissolve into a thicker, nutty soup, nurungji adds toasted-rice depth, black garlic brings a mellow sweetness, and maesaengi seaweed adds a soft, briny layer. The king abalone version adds a larger abalone and neungi mushrooms. Cold, tangy seasoned abalone or a crisp maesaengi pancake balances the hot soup, and groups can share neungi black-garlic baeksuk or Wando baeksuk, a whole boiled chicken served in a large pot. The restaurant is in the basement of a building on Eonju-ro 133-gil in Nonhyeon-dong.
