Idong Jeongwon Galbi 이동정원갈비

Idong Jeongwon Galbi is a large rib restaurant at 1970 Hwadong-ro in Idong-myeon, Pocheon. It grills fresh ribs and marinated Idong-style ribs over charcoal. Fresh ribs use thick cuts without a heavy coating, emphasizing meat juice, tender grain, and smoke absorbed over the grate. Idong galbi carries sweet and salty seasoning into the meat, pairing readily with rice and leaving a longer savory finish. When both are on one table, cooking the fresh ribs first keeps the meat and charcoal aroma clear. Marinated ribs contain sugar and color more quickly on the surface, so they can follow and be turned more often. The basic spread includes acorn jelly, vegetable salad, pickled perilla leaves, dressed lettuce, marinated crab, pickled onion, japchae, garlic, lettuce, and dongchimi. Smooth acorn jelly, herbal perilla, tart onion, seasoned seafood, glass noodles, and cold radish-water kimchi each interrupt the richness of the ribs in a different way. Water naengmyeon and bibim naengmyeon follow the grill. Water naengmyeon submerges noodles in chilled broth. Bibim naengmyeon coats them in chile sauce and receives cold broth separately, letting the liquid be added in stages. The broad hall leaves space between tables and accommodates several diners around the same charcoal grate. An outdoor deck faces a garden containing a waterwheel and fountain, placing the grill beside a landscaped view. Together, fresh ribs, marinated ribs, pickles, crab, two noodle preparations, and cold broth move the table from direct charcoal flavor to sweet seasoning and chilled finishes.
