The assorted platter splits wild-caught fish such as sea bass, red sea bream, stone flounder and goedorachi (a soft-fleshed prickleback) across one plate, each with its own color and firmness, and the lineup changes with the season and the day's catch. Mulhoe, cold raw-fish soup, comes two ways. The broth version is drowned in a chilled sweet-and-sour stock for spooning; the gochujang version cuts back the liquid and coats the fish and vegetables directly in chili paste, hotter and thicker.
