Gunbong Mugeunji Kimchijjim 군봉묵은지김치찜

The kimchi is domestic, aged two years in an underground cellar, and it simmers with pork in a stock made from 27 ingredients, shiitake and dried shrimp among them. The basic braise is just aged kimchi and pork, while the mixed braise adds back ribs, handmade dumplings and tofu-pouch dumplings to the same pot. A white braise and a clear kimchi stew use the same kimchi without the red seasoning.
