One charcoal grill in the open kitchen handles everything: Korean 1++ Hanwoo tenderloin, Australian wagyu, lobster, abalone, king prawns, scallops and octopus. Early courses bring beef or tuna tartare, crab cake and lobster bisque. The room is on the 32nd floor of Park Hyatt Busan, looking down on Gwangan Bridge and the sea, but window tables have to be requested when booking and are assigned from whatever is left. Lunch adds a hotel version of dwaeji-gukbap, Busan's pork and rice soup.
