Only Korean purebred Berkshire K black pork is used, either grilled at the table or cooked as barbecue in an oven. At the table you choose among cuts such as ogyeopsal (skin-on belly), moksal (shoulder) and hangjeongsal (jowl), which differ in how much rind and fat they carry. The oven side takes time: the black pork barbecue platter needs about 30 minutes, and the whole-rib barbecue is available only by reservation. Pulled pork is wrapped in bread or tortillas.
