The sixth-floor bar runs Spectrum, a reserved tasting where baristas brew a monthly single-origin pick several ways, served with a welcome tea and dessert. Upstairs on seven, no booking is needed: there is a signature blend or a single origin, and the flat white uses the Velvet White blend. Weekend waits are handled through the Catch Table app, visits have a time limit and seats are assigned. Tea and tea cocktails round out the menu, and the rooftop terrace is the open-air spot.
