Boulangerie Copain 블랑제리코팡

Opened in Mangwon-dong in 2017, Boulangerie Copain gives more of its small floor to the baking room than to the counter, and its name pairs the French words for bakery and friend. Baguettes and croissants anchor the range. The baguette, made with French flour, shows large holes in the crumb under a crisp crust and stays moist and chewy inside, while croissants come plain or in an injeolmi version, named after Korean rice cake dusted with soybean powder. Sweeter loaves include a square bread folded with sweetened Korean chestnuts. Basil crunch hides cream cheese and basil pesto inside a brittle crust, and the chocolate baguette scatters chocolate pieces through dough kept low in sugar.
