Its unlimited-refill meal places rice paper, several leafy and raw vegetables, charcoal-scented grilled meats, and a final bowl of pho into one sequence. Briefly dipping a wrapper in water, laying down thin portions of lettuce and crisp vegetables, and adding one or two pieces of meat makes a roll that is easier to close without tearing. Diners who want a vegetable-heavy meal can reduce the meat and change the combination of leaves and crunchy vegetables in each wrapper. Cilantro is supplied separately when requested, allowing it to be divided between the rolls and pho without seasoning the whole table. Trying each grilled meat once in order of stronger charcoal aroma, then refilling the preferred cut, creates a clearer comparison than filling the first several rolls with one meat. Since vegetables and meat return to the table over multiple rounds, stacking empty dishes at one side leaves room for incoming plates and the water vessel used for wrappers. Moving to pho only after the rolls are finished changes the meal from cool raw vegetables to hot broth and noodles.
