Yang muchim uses beef tripe, not lamb, sliced thin and dressed in a strong seasoning for a firm chew. Cold noodles balance the warm meat: Pyongyang-style mul naengmyeon in a clear chilled broth, or bibim makguksu tossed in a spicy, tangy red sauce.
