Every morning before dawn, domestic soybeans are boiled in a traditional iron cauldron to make the day's tofu on site. The dubu jeongsik (tofu set meal) pairs tofu hot pot or pan-seared seasoned tofu with boiled pork slices and tofu with stir-fried kimchi, while hayan sundubu, a white soft-tofu stew without chili, suits anyone avoiding heat. Once the day's soft tofu runs out the kitchen closes early.
