The same 1++ hanwoo is eaten differently depending on the floor. Downstairs is an omakase that opens with yukhoe bruschetta and hanwoo yukjeon, moves through aged tenderloin, sirloin and a mini hanwoo burger, and ends with rice and dessert; upstairs, each table has its own brazier for grilling single cuts such as saeng galbi or marbled ribeye. The beef is both ice-temperature aged and dry-aged; give the first piece nothing but salt.
