Fish is aged through a set process to soften the flesh and draw out sweetness and savor before it becomes nigiri or sashimi. The aged-sushi sets come in three tiers, Today's Seoshi, Special Seoshi and Seoshi-kase, each preceded by a small salad, warm rice porridge and miso soup. Seoreun maki, named for the thirty rolls made each day, is a thick futomaki packed with several fillings; once those are gone, no more are made. A small wood-lined room with counter seats facing the prep station makes eating alone feel natural, and reservations go through the official KakaoTalk channel. Fresh mochi-style tofu (nama mochiri dofu) and monkfish liver come as a la carte plates, matched with highballs or sake.
