Trout sashimi is sold by weight, starting at 1 kg, and the platter keeps lean slices apart from the fattier belly. Most of the meal becomes a mixed bowl: cabbage, red cabbage, lettuce, perilla and minari are laid in first, then trout, chojang (vinegared chili paste), soybean powder and sesame oil. Since minari and perilla are strongly scented, each diner adjusts them in their own bowl. Quail eggs, peanuts and chewy potato rice cakes arrive before the fish. Takeaway and parcel delivery let people assemble the same bowl at home.
