Mapo Kalguksu 마포칼국수

Several plump oysters go into each bowl of oyster kalguksu, and their briny flavor spreads through the whole broth. The broad, smooth wheat noodles shed flour as you eat, so the soup thickens slightly toward the bottom. Larger oysters are best eaten on their own, smaller ones lifted with the noodles. The only sides are napa cabbage kimchi and kkakdugi (cubed radish kimchi). The dining room links several units in the basement of Samchang Plaza, between Gongdeok and Mapo, and lunchtime can bring a queue.
