The restaurant now trades as Manho Galmi Shabu-shabu. In Myeongji the local surf clam is called galmi, after its orange flesh shaped like a gull's beak, and here it comes three ways: shabu-shabu, boiled, and grilled with pork belly. For the shabu-shabu, clam goes into a simmering vegetable broth a little at a time for just a moment, and noodles, ramen or fried rice finish the pot. Galsam-gui puts clams and pork belly on the same grill, where the clams cook in the rendered pork fat.
