Fresh domestic pig's trotters are boiled and sold on the same day, and front and rear legs are ordered separately. The plain jokbal (braised trotter) comes sliced warm, seasoned mostly with soy sauce rather than sugar or medicinal herbs, so the skin stays springy and the meat moist. A spicy version, herbal bossam (boiled pork slices) and a set with tray noodles round out the menu.
