Gyeongju Wonjo Kongguk 경주원조콩국

Gyeongju Wonjo Kongguk is a soybean-soup restaurant at 113 Cheomseong-ro in Gyeongju, North Gyeongsang Province. Warm kongguk is divided into three topping combinations. Number one contains black sesame, black soybean, honey, and a glutinous-rice doughnut, adding dark roasted seeds, sweetness, and a chewy piece to the soybean liquid. Number two combines sesame oil, perilla seed, egg yolk, and brown sugar, placing more emphasis on aromatic oils and the thickness of yolk. Number three uses the glutinous-rice doughnut with perilla seed, egg yolk, and brown sugar, joining the chewy pastry and yolk in one bowl. All three begin with kongguk, but black soybean, honey, sesame oil, yolk, and doughnut appear in different arrangements, changing sweetness, aroma, and texture. Cold choices include chilled soybean soup with u-mu and kongguksu. U-mu is a translucent jelly set with agar and is cut into pieces or strands for the cold soybean liquid. Kongguksu uses wheat noodles in cold soybean broth, shifting the dish from jelly to noodles. Beyond soybean soup, the menu includes sundubu-jjigae, perilla sundubu, and haemul-pajeon. The soft-tofu stew has a cleaner broth profile rather than depending only on aggressive heat. Seafood pancake brings a browned crisp surface and a moist interior that can be divided beside the soft soup. The banchan spread is concise rather than extensive, and some meals have included fish served warm from the grill. The single-story room occupies a renovated hanok and contains standard chair seating with a smaller number of floor-seating tables spaced apart from one another. Ordering begins with the warm kongguk topping set. A diner can then switch to cold agar jelly or noodles, or build a broader table with tofu stew and seafood pancake. The important distinctions are not three entirely different soups, but the toppings inside the warm soybean base and the choice among doughnut, yolk, jelly, and noodles.
