Yebisu and Sapporo pour into thin, chilled glasses here, and the bar treats line maintenance, glass rinsing and pouring technique as the things that set foam and carbonation. A menu comparing the same beer poured different ways sometimes appears. The room is small and mostly standing, so a busy night feels like a back-alley beer stand in Japan; when it is full, guests take a beer outside for a quick drink. Reservations and dogs are accepted. Food runs to small plates that sit easily beside a glass: meat yakisoba, Japanese-style Napolitan pasta, gyoza, tebasaki wings, fried chicken skin and butter-grilled octopus.
