Halal Uyghur cooking comes out of a third-floor dining room on Myeongdong 8ga-gil. Hand-pulled noodles in the laghman tradition go either into a soup or under a stir-fry of meat and vegetables, and the stir-fried beef noodles carry more Sichuan pepper and ginger than chili heat. Thick-skinned Uyghur dumplings change as you eat them: one piece plain and dry, the next soaked in soup.
