Chanyangjip 찬양집

Chanyangjip is a long-running noodle restaurant in a narrow lane off Donhwamun-ro 11da-gil in Jongno. Its principal dish is haemul kalguksu, a bowl built from freshly prepared knife-cut noodles, clam and mussel broth, shellfish, and simple vegetable garnishes such as zucchini and scallion. The stock stays clear rather than relying on a red chile base. Salinity and savoriness come from the shellfish, while dried anchovy contributes a rounded broth flavor beneath it. The noodles are broad and slightly irregular, characteristics of kalguksu that let some edges soften more quickly while the thicker centers retain resistance. Clams and mussels remain in their shells, so removing several first opens space for lifting the noodles and allows the broth settled at the bottom to mix through the bowl. Fresh geotjeori kimchi accompanies the soup. Its crisp cabbage, garlic, and red pepper seasoning provide a cooler, sharper interruption to the hot broth and wheat noodles. Mandu can be ordered as a separate side. The dumpling wrapper and compact meat-and-vegetable filling supply a denser bite than the noodles; placing one in the soup softens the wrapper and lets some of its seasoning mingle with the stock. Chanyangjip sits between the Jongno 3-ga and Ikseon-dong areas, behind an aged storefront and a small alley entrance. Tables continue into the compact interior in the manner of an older Seoul noodle shop. Bowls arrive with the shellfish distributed through the noodles rather than separated onto a second plate, and the red geotjeori remains outside the broth until each diner adds a piece to a bite. Mandu retains its enclosed filling on the side, while a dumpling placed in the hot stock gradually absorbs the anchovy and shellfish broth.
