Busan Kkomjangeo is a hagfish restaurant at 8 Gudeok-ro 22beon-gil in Jung-gu, Busan. The business received its restaurant license in September 1981 at 38-1 Nampo-gil, or lot 30-1 in Nampo-dong 2-ga, before moving within the Nampo and Jagalchi food district to its current address. The kitchen handles live hagfish and cooks it in two main forms. Salt grilling leaves the pieces relatively plain, exposing the marine oil, elastic flesh, and browning from the hot surface. Seasoned grilling coats the hagfish in a red sauce with chili, sweetness, and salt, then reduces the liquid as the pieces cook. Hagfish does not flake like an ordinary white fish. The cut sections contract over heat and retain a soft, offal-like elasticity, while the irregular outer surface holds the sauce between folds. Fresh vegetables, garlic, fermented dipping paste, and a clear clam broth surround the grill or pan. A firm, sliced accompaniment resembling pyeonyuk adds another cool, chewy texture before the hot hagfish. Rice and crushed seaweed are stirred into the red sauce left on the pan, where the grains absorb seafood drippings and toast against the metal. The licensed dining area at the 1981 address measured about 31 square meters. The current ground-floor dining room uses mostly four-person tables, with the hagfish pan placed at the center of each table and the vegetables, dipping paste, clam broth, and rice arranged around it.
