Wonjo 18 Wandang 원조 18번 완당

Wonjo 18 Wandang is a Busan restaurant serving wandang and bal-guksu in Seo-gu. The founder adapted food learned in Japan to Korean preferences and opened the business in 1947. The same family has carried the business through three generations, and it now operates one location without branches or franchises. Wandang is a Busan local dish made by wrapping a small filling of meat and vegetables in a thin wheat wrapper and cooking it in broth. Here, the wrapper is formed to roughly 0.3 millimeters and filled with a mixture made from raw meat. Wandang-myeon places the dumplings and noodles in the same bowl of broth. Gyoja wandang has a larger meat filling than the standard version and comes with a separate sauce. Bal-guksu consists of chilled buckwheat noodles placed on a bamboo mat and dipped into sauce served alongside; on-bal is its warm counterpart. Hot noodle choices also include stone-pot udon, pot udon, and tofu-pouch udon. Seaweed rolls and tofu-pouch sushi can be served together or as a single type, with half portions available. Multiple tables fill the broad dining room reached by descending from the street-level entrance.
