Sinseonsaeng Ganjang Gejang 신선생간장게장

Sinseonsaeng Ganjang Gejang is a marinated crab and seafood restaurant on the second floor of 33 Okcheon-ro in Saha-gu, Busan. The core dishes are flower crab matured in soy seasoning and flower crab coated in a red, spicy seasoning. Ganjang gejang is opened at the body so the soft meat can be pushed from the shell and placed over rice. A small amount of rice can then be mixed with the innards and seasoning inside the top shell. Yangnyeom gejang carries chili heat and sweetness into the shell, and alternating each piece with plain rice controls the concentration of the sauce. When both crab preparations share the table, the meat remains cool and soft in each, but soy savor and immediate red-pepper heat stay clearly separate. A mixed seafood jang expands beyond crab by including abalone and shrimp. The firm chew of abalone and the springy texture of shrimp give the platter more contrast than a single marinated shellfish. The seafood-centered Sanda-bada selection broadens the table in a similar direction. A chive seafood pancake cooks chives, batter, and seafood into a broad disk, inserting a hot, oil-rich texture between chilled marinated dishes. Diners who do not eat cold or marinated seafood can join the same meal with cooked options such as an earthenware grilled dish, earthenware bulgogi, or bulgogi bibimbap. Earthenware bulgogi combines cooked beef and hot liquid with rice, while bibimbap mixes beef and vegetables directly through the grains.
