Mangchi, the Gangneung name for the gomu kkeokjeongi fish, goes into a spicy stew (mangchi maeuntang) that keeps bubbling at the table with potatoes, vegetables and sujebi dough flakes. The flesh is firm and springy, close to monkfish, and the broth stays clean even as the fish and vegetables give it body.
