Sushi Mirne Main Branch is a Japanese restaurant in Unit 100 on the first floor of Iljin Building at 75 Sesil-ro in Haeundae, Busan, serving sushi, mulhoe soba, and eel rice bowls. Its open kitchen keeps the fish-preparation and sushi counter in view of the dining seats. Sushi sets change both the piece count and the accompaniments. Lunch A and B contain nine and ten pieces respectively, each with small udon and a croquette. Lunch C has eleven pieces with shrimp tempura, a croquette, and small udon. The Mir and Special sets pair special sushi with either shrimp tempura and potato croquette or teriyaki sea-bream belly and botan shrimp sushi. The premium set contains eleven pieces, including one omakase selection, with the fried sides. Moriawase mulhoe soba combines abalone, snow crab meat, webfoot octopus, squid, and northern clam with buckwheat noodles in a cold raw-fish preparation. Its larger size also includes one whole spear squid. Sushi separates fish and rice into individual pieces; mulhoe soba mixes seafood, noodles, vegetables, and seasoned liquid in one bowl. Moriawase bibim soba remains a separate item from the broth-based mulhoe. Eel rice bowls divide into unadon and Kanto-style unaju. Unadon places freshwater eel in a donburi bowl, while unaju serves one whole eel in a rectangular jubako box, changing both the vessel and the amount of eel. The house-made pork-loin cutlet set combines cutlet with three sushi pieces and small udon.
