Seoul Gamjatang Seohyeon 서울감자탕 서현지점

Seoul Gamjatang Seohyeon is a pork-spine restaurant on the first floor of the Daehyun Building at 315 Hwangsaeul-ro in Bundang-gu, Seongnam. It serves standard gamjatang, aged-kimchi gamjatang, and several individual hangover soups. The shared gamjatang uses domestic fresh meat and places pork bones and ugeoji greens in a large pot. Bone haejangguk compresses the same spine-centered meal into an individual earthenware bowl. The special bone soup increases the proportion of bones and meat, making the meal more focused on separating pork than drinking broth. Aged-kimchi gamjatang and its individual soup version add fermented acidity and softened cabbage leaves. They are redder and sharper than the savory pork stock of the standard pot. Removing meat from the bone first and adding ugeoji or kimchi to the next bite keeps soft pork distinct from fibrous vegetables. Once most bones and greens have been eaten, rice can be fried in the remaining shared broth. Cheese adds more salinity and fat to that final rice. Seonji haejangguk avoids the work of picking large bones and is eaten with a spoon through soft blood curd and soup. Ugeoji soup centers on tender leafy greens, providing another option when a large meat bone is not wanted. A solo diner therefore chooses among bone, blood curd, and greens. A group first decides between the mild standard pot and the fermented acidity of aged kimchi, then continues the same broth into fried rice. The spacious room has enough table surface for large pots and shared side dishes. Positioned on Hwangsaeul-ro between Seohyeon Station and the Bundang district-office area, the restaurant separates individual soup meals from group pots without changing its pork-spine base.
