Seomyeon Milmyeon 서면밀면

Seomyeon Milmyeon is a Busan wheat-noodle restaurant in EOS Plaza at 25 Seojeon-ro in Jeonpo-dong, Busan. It divides the same cold wheat noodles between mul milmyeon with beef-bone broth and bibim milmyeon coated in a house seasoning. The broth for mul milmyeon is simmered from beef bones for seventy-two hours and prepared daily. Once chilled, it runs between the strands, while a garnish shredded by hand adds a different grain on top. Noodles, liquid, and garnish can enter the same bite or separate in the bowl, keeping the elasticity of wheat noodles distinct from the fluid texture of the bone broth. Bibim milmyeon removes the soup and applies a spicy-sweet sauce directly to the noodles. Mul milmyeon loosens the strands in a large volume of cold broth and carries them with liquid. The bibim version makes sauce cling to the surface, concentrating seasoning around each strand. The first therefore centers temperature and broth volume; the second centers sauce density, sweetness, and heat. Ingredients are brought from nearby Bujeon Market each day, and each bowl begins cooking after it is ordered. The hand-shredded garnish supplies a length and fiber different from the noodles. Mandu add a warm component to the cold meal. Their filled, moist interior and soft steamed wrapper contrast with the chilled, elastic strands. An extra portion of noodles can be added separately. In mul milmyeon it changes the balance of noodles to broth, while in bibim milmyeon the seasoning is distributed across more strands. Rather than extending into unrelated dishes, Seomyeon Milmyeon builds the meal from four elements: seventy-two-hour bone broth, spicy-sweet seasoning, moist dumplings, and additional wheat noodles.
